These tasty little snacks are school lunch baking for the week - 10 minutes to prepare, super easy, and free of refined sugar.
High in omega 3, iron, protein and minerals, they're a great energy boost to keep blood sugars stable throughout the day, and help young brains stay focused!

1 cup almond meal
1/2 cup dried cranberries
1/2 cup dried sultanas or apricots
1/2 cup dessicated coconut
1/4 cup honey or maple syrup
2 Tbsp cocoa
2 Tbsp coconut oil (melted)
3 Tbsp chia seeds
1 tsp vanilla essence
Mix all ingredients in food processor or blender until mix starts to stick together
Roll into balls, either coat in extra coconut, or leave plain
Cool in fridge until firm, keeps for up to a week in a sealed container
