Sundried tomato, walnut, chickpea and broccoli pasta

If you're like me and crave carbs when you're tired (who doesn't ) this is a great quick healthy solution

It requires very little prep time, includes loads of fibre and healthy fats to keep blood sugar stable, and is SO satisfying!!

It contains wholegrains, legumes, dark green veges, nuts and omega 3 - all you need for a gut and brain healthy meal

Even my tomato hating child loved it...

I used wholewheat penne but you can sub gluten free if needed I also used feta but its fine without it

Recipe : 200g wholewheat pasta 1 cup walnuts 3/4 cup sun-dried tomatoes 1 can chickpeas 1 head broccoli Handful of mint 1 Tbsp olive oil Juice of 1 lemon 100g crumbly feta Pepper and chilli flakes to taste (optional)

Put pasta onto cook as per instructions Chop brocolli into florets and steam until just soft Put walnuts , lemon juice, Sundried tomatoes and olive oil in food processor or nutribullet, and blend to a Pesto consistency (you may need to add a splash of water if its too thick) Coarsely chop mint and drain chickpeas (retain a bit of the water to mix through if you want) Drain pasta, mix pesto/mint/chickpeas thru Serve with Feta crumbled on top +/- cracked pepper and chilli flakes

You can also use baby spinach or chopped spinach leaves instead of broccoli It's also great served cold as a pasta salad
