Anyone who has young children knows how hard it can be making school /preschool lunch boxes that are both healthy, yummy, and actually get eaten 😉
Putting effort into a lunch box that comes home hardly touched is a bit soul destroying, not to mention frustrating!
My kids are primary school aged, and have grown up on a plant based diet, we also try to minimise added sugar and make sure they get adequate protein and healthy fat for energy and growth.
High sugar high GI foods tend to lead to big energy and mood swings, which makes learning harder and also triggers after school meltdowns lol
Keeping blood sugar stable with low GI higher protein foods makes a big difference!! I do a lot of baking with nut flours, minimal added sugar, and even legumes (chickpea choc chip cookies and black bean brownies are so good!)
One trick I've found helpful is doing baking once a week (usually Sunday evening) so there's a healthy morning tea option that doesn't require any prep, and is packaging free
This chocolate chunk banana bread is amazing, it's gluten and dairy free, and can be made vegan with flax eggs - it also has no added sugar apart from some dark chocolate chips!
It's low in sugar, low gi, with a good protein boost - perfect for keeping tummies full and brains healthy ❤️
I added a few tablespoons of chia seeds for omega 3 and added protein - it's also great if you need a grown-up afternoon tea treat 😉
